The Venture Brothers was fantastic the last time I saw it, but my tastes may have changed since then. It is, indeed, very Jonny Quest, but more... well, the humour is more "adult," but it's a rare example in comedy where the character writing is genuinely more mature as well.
And Foetus does the soundtrack, which is glorious.

H. Jon Benjamin's voice coming out of anyone but Coach McGuirk is still a weird concept for me to wrap my head around, but when I can, I've found Bob's Burgers to be quite entertaining, if occasionally crass

I feel like I tried to like The Venture Bros. during my hardcore Adult Swim phase but it always kinda felt over my head because a lot of it seemed to be reliant on being familiar with the quirks of the characters and the show it lives as a satire of, neither of which were things that I would've been familiar with at the time
I might be misremembering but it always struck me as the type of show that you'd get the most out of if you watched it from the beginning

It's a rare 'adult series with actual continuity', with characters that develop and change sides fairly realistically. It's also similar to Rick and Morty or Bojack Horseman in that it's a deconstructionist take on an established genre. It's Johnny Quest 20 years later, when the adventure kids are emotionally screwed up from being dragged on dangerous adventures by careless caretakers, where the villains are as involved in petty infighting as they are fighting their assigned rivals, and everybody's just trying to find meaning in a world where Fu Manchu villainy and science hero heroics have both ultimately failed.

This goes beyond beating a dead horse. You are beating a dead horse, bringing it back to life and then forcing it to create soulless games and movies again and again, repeating the same mistakes despite them being both glaringly obvious and criticized again and again.
There is no way this will end in anything other than utter disaster. The Super Mario Bros. film, built on a much stabler and more powerful brand, was a disaster. The Mario franchise can take a hit like that and many more. You can't.
