I guess if they're ruffled chips and they're all perfectly flat it wouldn't be so bad
i don't actually eat potato chips with a fork all the time
i've eaten them using my hands, a spoon, a fork, chopsticks, even tongs once
that said if i've just added them as a lazy topping to some pasta-based dish, i'm not exactly going to use my hands just to eat the chips
if i want a snack while i want both my hands free to do whatever without greasing up everything around me (e.g. computer keyboard, phone, papers, etc.), i'll just grab a bowl, pour some chips into it, and get a fork
or, sometimes, a spoon, because i happen to be eating some other snack food at the time like a cup of yogurt and i don't feel like washing something else just because i was in the mood for potato chips
"wouldn't you be washing your hands while doing the dishes anyway?" true, but if i'm going to be sitting with some bowl of snacks for an hour or two while trying to reading a paper...
alternatively i can eat pretzels, which are non-greasy also often cheaper than potato chips

1. bring some water (not too much) to boil on high heat 2. dump in some mixed veggies 3. bring water to boil again on high heat 4. add pasta 5. bring water to boil again but on low/medium heat, leaving gap in pot lid to vent 6. let it boil for a while 7. when water is mainly gone but not mostly dry, pour into bowl 8. put some other water into pot to keep it moist so it doesn't become a pain to wash; put lid back on so the interior gets covered in vapor condensation 9. add some black beans to bowl
10. discover that the can of black beans was no-salt-added, or even if it had salt added, maybe the flavor isn't enough 11. add toppings. possible toppings include: cheese, bacon bits, potato chips, sour cream, kielbasa, salad dressing, etc.

i know it's popular to serve potato chips a.k.a. crisps with a sandwich, so yeah, if i'm already eating my sandwich by hand then i might as well just use my hand for those
