I really like chicken skin. I will eat boneless skinless chicken, but I prefer rotisserie chicken or chicken wings. with bone in and skin on. However, breading ruins chicken skin in my opinion.

Saturday I'm going to try making bacon double cheeseburgers where the second patty is sausage, with an egg, tomato and mushrooms and a side of fries.
For the first time tried rabbit meat at home, as the store nearby started to carry it. So, we had rabbit braised in sour cream, with onions, carrots, garlic and thyme. Delicious, though time-consuming and rather expensive

So, I stumbled on a recipe for what could probably be considered "sweet and sour sauce" out of our Martin Yan cookbook.
Yan didn't advertise it as such, it's just part of a different recipe, but the taste is similar to what you'd get at Chinese a restaurant...well...an upscale one, at least.
Pretty easy too!
1/4 cup light soy sauce (might be at the Asian section in a store, definitely at an Asian grocery store)
1/4 cup dark soy sauce (this is the stuff most often used and can be fro anywhere)
1/2 cup honey (I like wildflower over clover, the honey stands out a tad more)
3 tbsp. rice vinegar
2 tsp. cornstarch dissolved in 4 tsp. water
Add everything minus the cornstarch mixture together (I find it helps to put the honey in a cup and heat it in the microwave for 10 to 20 seconds so it dissolves much quicker), put in a saucepan and bring to a boil, add the cornstarch and stir til it thickens.
Yan had this with Salmon and Chinese long beans, but I bet it would work on some pan-fried meat with or without breading. Onions and bell peppers would probably also work as a decent addition.
Hell, you can add pineapple too, if you want. I won't judge.
Made rabbit for my parents again. They love it, and the meat itself is delicious, but the recipe is a bit too bland for my taste. Needs mushrooms or more spices.
I am not really fond of tea (I don't hate it, but it is definitely not my first choice of drink), but recently found a type of tea I like. Black tea with cardamom, cinnamon, peppercorns, ginger, cloves and anise, and milk.

If you like Sweat tea, I advise Sweat and Condensed Milk.
Ice wine is awesome, probably taste more like non-wine drinkers think good wine taste like (Sweet and smooth, as opposed to the more bitter, sharp, complex taste wine usually has).
"Chai tea" sounds very funny to me, because "chai" (чай) means simply "tea" in Russian.
Condensed milk is also very popular in Russia. Can't have it now because of that blasted diet.
Also, condensed milk is the main ingredient of one of my favourite cakes (which I can't have, too, because it is very sweet and very fatty, but going to post anyway :). The best part is that it does not have to be baked.
500 grams of cookies One big cup of walnuts (without bark, of course) One can of condensed milk 100 grams of butter
Smash cookies and walnuts into tiny pieces. Mix butter with condensed milk, then mix with cookies and walnuts. Leave in a cold place for 10-12 hours. Ready!
I won't recommend switching walnuts to other kind of nuts, by the way. Their bitterness adds interesting touch to what otherwise would be excessively sweet.
Oh, and if you are able to find boiled condensed milk instead of regular one, it would be perfect
The downside is my cream had one off despite being over a month out from the expiration date. Luckily, I had grabbed extra, but not enough for the whipped cream...Kinda had to improvise with whipped butter and Mascarpone there...
It turned out pretty good! Though, I think the cream would have helped.
Also, it's actually rather light on cheese. Leigh commented that it was sort of a shrimp pasta with Alfredo sauce (though, this uses Swiss cheese, not Parmesan).
I have a ton of left overs, so I'll try it with whipped cream and maybe more cheese.
Seems odd messing with a Hubert Keller recipe, but he was on a budget and cooking for a lot more people, so there's likely room for improvement.

I made Cajun rice the other day.
It's delicious, though could use more texture. I wondering if it would have been a good idea to let the rice sit at a higher temperature at the end to get some crunchy rice on the bottom.

So, now that the Mac and Cheese is almost done, some comments.
Whipped cream really sells the dish at the end (whipping your own cream that is, not store bought stuff).
More cheese did help, but it could easily over power the dish. I think sprinkling some grated Swiss on top to add texture and a little cheesy kick help.
This dish reheats way better in the microwave than on the stove.

Everything about that dinner was pretty much amazebals.
Fish was perfect, Beef could have used more time marinating, but was great otherwise.
Didn't have room on the grill-pan for the onions and mushrooms, so I sauteed them in a tiny bit of vegetable oil then dumped the remnants of both marinades on them and let it simmer for a bit.
Added some sticky rice, jarred kim-chi, and just a few leaves of lightly grilled bok-choy all made for good times.

I am going to try making a French onion soup tomorrow
French onion soup is awesome!
I've made it a few times and it's been great, just need a good beef base. I've used "better than bouillon" for mine and it works great.
Not sure if there's a great Russian alternative, but if you're not making your own stock from beef bones, a high quality substitute still tastes great.
^ Beef is about 14 pounds, so it's her own fault really.
Truth be told, knowing me I'd probably starve to death before I could bring myself to turn on the cats.
