You know, I really hope there are other Gem rebellions out there
Not because I think the Crystal Gems can't save the Earth on their own; no, they got this covered
But what about all the other planets?
Clearly Earth is just a drop in the bucket compared to the overall Homeworld empire, so whatever they've got planned for the other planets, I hope there are Gems there to defend them

What I mean though is, Peridot's "Betrayal" was just fluff, misunderstanding, it was always her intention to try to save the Earth "her own way", by reasoning with YD.

well in her own mind, she thought she was doing the logical thing by A) avoiding the conflict of finding and destroying the Cluster and B) earning praise from Yellow Diamond for being so rational.
When neither of those happened as planned, we got this.

So we're going with "Perry had this planned all along"? I interpreted it as her having a change of heart at the last minute.
Because, well, if she had intended all along to ask Yellow Diamond to defuse the Cluster, why wouldn't she have told Steven that when he confronted her?

It's likely that the confrontation with Steven made her decide to do that instead to begin with.
See, that would make sense to me.
I guess in the end, whether she planned it or not is an almost irrelevant detail, since clearly her change of heart happened very recently (since she didn't understand the inherent value of life when she found the Earth colony plans a short time earlier).
I think it is fairer to say that her loyalties were conflicted. That conflict probably isn't totally over, but she's made up her mind as to whose side she falls on now.
There have been a couple scenes where it was very obvious that Peridot was feeling things she wasn't used to feeling on the Gem Homeworld (the titular scene from "When It Rains" is probably the best example). Even if her specific intention was misguided I think it's pretty clear that Peridot was trying to save the earth, in her own way, it's just that her way happened to be a very bad way to go about it.
The thing is if what we know about the Gem Homeworld is any indication, Peridot could be a saint (and make no mistake, she's not) and still be fighting against literal centuries of conditioning. The gem caste system is all Peridot's ever known, and a few weeks with the Crystal Gems isn't going to reverse that so easily.
It does make me wonder if Peridot had ever actually spoken to YD before. Because I think about it and it's classic fascism. Build up the picture of the leader as this perfect all-knowing, all-powerful being.
And you can see Peridot's expressions as she's talking to this person that she knows more as a concept than an actual being, and nothing is going like she's expecting, and in that moment she doesn't just defy her overlord, she calls them out. Like, you could tell from the expressions, this episode had some fucking wild takes. This person, who is supposed to be this perfectly rational near-god, is acting petty, and emotional, and stupid, and that doesn't sit with Peridot's worldview--and I really have to emphasize that word because her entire reality is being undermined by this conversation--because she "knows" what she's suggesting is the objectively correct course of action, so, without any rational response left, she flips out.
Yeah, thinking about it, it does actually make more sense that Peridot had that sort of thing figured out all along. She just doesn't fully understand why people would care about others beyond their use to them yet.

UPDATE: I just asked this question to Matt Burnett, the story editor to Steven Universe on Twitter and there was indeed a scene that was cut early in productionf the episode with Ameythyst explaining to Peridot that she grew a digestive system to eat.
