Huh, that's interesting to think about. At the risk of Fantastic Racism, I think being an earth pony meshes well with her character. She's very down-to-earth, and she seems to enjoy the manual labor that she does for a living.

It's interesting...Twilight and Rainbow's races are very much integral to their special talents (magic and flying, you know), and without magic Rarity would probably be worse off too...you can't really sew with hooves.
The other three, though...I can imagine that unicornized Applejack would probably just continue behaving as she always has ("I didn't need magic before and I don't need it now!"). Pinkie Pie would probably find the wings more an amusement than anything else..."I can fly now! Wheeeee!" And Fluttershy pretty much acts like an earth pony anyway.

I focused mainly on "Sonic Rainboom" because Cloudsdale is featured heavily in it, as do the obvious difference(s) between pegasi and the other races.
If anything, it seems like Dragonshy would have been easier if she didn't have wings, just so they wouldn't have to explain why she had to walk instead of fly. In general, the fact that Fluttershy isn't a very good flier makes it pretty easy to imagine the series with her as a earth pony.
