Books I have read that are clearly not-generic?
Off the top of my head:
The Egypt Game, Finnegan's Wake, The King's Shadow, The Remarkable Journey of Prince Jen, The White Plague, Nursery Crime, Watership Down, The Headless Cupid, Bride of the Rat God, E. Nesbit's book of Dragons (which is anything but generic), The Book of the Lion, The Book of the Dun Cow, The last of the really great whangdoodles, the entire works of Oscar Wilde, A pocket full of Seeds, Half-magic, Asimov's Foundation, Flatland.
i do like Discworld, tho that is obviously a satire, not a straight example of the genre
i quite like the idea of mixing post-Tolkienian elves with more traditional conceptions of the Fair Folk, so that their apparent perfection takes on a highly sinister quality
(the Thalmor are not an example of this; they're too human)
Discworld isn't so much a good fantasy world in itself as a good satirical fantasy world.
It wouldn't make sense in a vacuum, but the presence of fantasy tropes outside of it allow it to play off of those tropes, resulting in the wonderful literature that we all enjoy.

My favorite is the Merriam-Webster's New Collegiate Dictionary; specifically before everything went downhill with Tenth Edition.

when i was younger i really liked The Edge Chronicles (not related to the above, just saying since we're on the topic of fantasy stories)
