I personally find her inclusion to be mind-boggling, even now. I can't imagine that the demographics for Wii Fit and SSB are particularly similar. And, while the concept of a (yoga/tai chi) based fighting character is appealing, the Wii Fit Trainer is not how I'd go about realizing it. She doesn't have a sense of individuality or charm to her, besides her moveset. She doesn't have the widespread popularity (or even recognition) of most SSB characters; if you asked me yesterday about the Wii Fit Trainer, I'd have no idea what you're talking about. And I can't get over her final smash, which seems boring and uninspired, or her mannequin-like features.
Don't get me wrong. Using the idea that you came up with at 4 AM, that would seem silly in the daytime, is how a lot of interesting and unexpected characters are made. It's just that they chose an idea that required a special touch to it, and they didn't have the touch to make something truly amazing.
What other kind of female character could they add? (that they could get the rights to, and that has variety)
I'll be fair, I haven't really touched Nintendo since I effectively became a PC gamer, but I know people have wanted Krystal from Star Fox. And I'm sure Anonus could name a few characters from the Paper Mario franchise. Goombella, perhaps.
I'd also suggest Paula from Earthbound and Birdo (Birdo's region-variable sex aside), but SSB is already chock full of characters from those franchises.
Actually Wii Fit Trainer really isn't that crazy of a choice.
She does represent part of Nintendo's game lineup, and a fair amount of picking for Smash Brothers is picking for representation as opposed to picking what's popular: it's also why we have characters like Game & Watch and ROB.
And sure, you mention Paula, Birdo, Krystal, and Goombella, but keep in mind that all of those characters are from series that are already represented.
Plus, look at all her moves; all she's doing is weaponizing the Wii Fit workouts. They hardly had to come up with anything. =P

I think part of it is that, when Nintendo usually brings in a left-field character, they usually have nostalgia and the retro-feel going for them. Pit, ROB, the Ice Climbers, they were appealing to the old guard of the Nintendo Fandom. Wii Fit, on the other hand, is new and doesn't have that kind of tenure.
Also, for what it's worth, they were all playable in one way or another.
