The fact that it still logs where I go when I'm browsing incognito bothers me though, not because of lolporn or anything, just because, doesn't that kind of defeat the purpose?

Modernism is based around the idea that there is no objective truth, or that the truth is unknowable. A lot of people were very upset about this, because it would mean that there's no objective morality or right way of doing things. Artistically, modernist stuff tends to be very chaotic and experimental, but also has this kind of longing for a time (past or future) or place or reality where meaning exists and is known, e.g. Eliot's conservatism, Yeats' "gyres" and so on.
Postmodernism came along with the idea that there really is no objective truth, and that's OK. Instead, postmodernism talks about truths, plural. Like, suppose you had a fight with your friend and each of you thought the other started it. A modernist would listen to both your stories and try to piece together what really happened; a postmodernist would say that both accounts were true depending on your perspective.
If you're into science, you could compare discoveries like Lorentz contraction and Heisenberg's uncertainty principle, which show that reality is not as immutable as it was previously thought to be, which influenced some of this thought.
Postmodernism is also about reflecting and analysing. Artistically, it's associated with the breaking down of boundaries, which means juxtaposing high culture and low culture, breaking down the barriers between writer and reader and artist and critic, mashing together things that wouldn't normally be mixed, and flipping binaries around to privilege different ways of looking at the world. All this is done playfully and with a lot of irony.
