I dunno, like, you can't eat the bones or anything anyways, so I might as well let the people who are preparing my food cut out all the inedible bits first.
I think there might be some sort of evolutionary thing making meat only register as well and truly eaten if you've had to navigate around bones, hence why it's so easy to eat so many damn nuggets

I'm pretty sure the human mind associates eating with a level of difficulty or spent time that is no longer there
Haven't had vegan tenders but I've had vegan fake "chicken" patties and they were decent. I'd probably get them pretty often if I decided to give up meat.
