The morality of Ulfric in relation to that of the Stormcloaks in general is common topic of discussion on the Skyrim Confessions Blog that I follow.
They've had to delete posts because the argument got too big.
The general consensus is that Ulfric's not as bad as Stone-Fist and, well, the really racist Stormcloaks, but he's still kind of a jerk for not supporting the Dunmer and the whole Forsworn fiasco.
And even then, some people will still try to justify the Dunmer hatred because of the whole history between elves and humans
And the simple fact that the Stormcloak Rebellion is sort of set up to fail. It weakens the already fractured Empire and creates another state that will likely be weak as well.
You must understand that the Nords hate the Dunmer for a reason. The Nords believe that it was the Elven devils who prevented Lorkhan from becoming whole again when he went to Red Mountain to reclaim his heart. That's the equivalent of some Pakistani people preventing the Second Coming of Christ.
Ulfric is OK, don't agree with him but he doesn't seem like a bad dude. Attacking Whiterun is a dick move tho
I feel like killing a young, inexperience king due to a horrendous and obvious logical fallacy (that even Ulfric is probably aware of) sort of calls his not a bad guy status in question.
That was just a joke, actually. (Imperial, geddit?) And maybe I'm not interpreting his character right, but I always saw it more as "I hate the Thalmor just as much as you do and fracturing the Empire even more is a stupid idea" than colonialism. I don't think Ulfric Stormcloak would be able to run his state for very long and the Empire lasted for a long, long time with very few attempts at homogenization.
i think he just sees the uprising as a trivial annoyance, like Ulfric's just making trouble for the hell of it and without Ulfric the problem will just go away.

Yeah, that's what makes him a compelling character to me. He is kind of a jerk, but he also knows what he's doing. He can't make a speech and he has the opposite of charisma, but he's doing what's right.
The Stormcloak uprising is basically founded on a misunderstanding: that the Empire is weak because it knows when to fold and wait to attack until later.

plus the Thalmor are going around abducting and torturing people, tho they didn't start doing that until the Stormcloaks made a scene so they can't blame the Empire for that one

I had my Khajiit break into the Thalmor Embassy after finishing the main quest so I could stab Elewen in her sleep with my soul-trapping dagger. And I feel that most players would say that binding her soul to the Soul Cairn for all eternity wasn't harsh enough.

really i didn't want to join either side, i just wanted to drive out the Thalmor
i tried to properly roleplay my way thru it which meant missing out on a lot e.g. the entire dark brotherhood questline :v

The Elder Scrolls is not very mind-screwy, with the possible exception of certain Daedric quests
the soundtrack is an orchestral score (synths imitating an orchestra in previous titles) and does not involve metal
there are large breasts but they are clothed, and the character models are not very pretty
there are large worlds to explore with lots of secrets to uncover, but i imagine the difficulty might be somewhat tame for your liking
