i think it's neat when i go to a mildly less american restaurant and which spices are universal is different

it's pretty arbitrary but otoh nobody but me ever puts enough pepper on things so it's good

I've always found fresh ground pepper to have a stronger flavor, and since I love pepper, I like this trend.

You need to be able to grind up the salt fine enough that it can be used to knock down buildings.
