It is collective worldbuilding. We wouldn't have to have sessions: it adapts well to document-and-forum style play. The original medium is notecards. Everyone contributes to creating a history
I'm only watching, but a suggestion before you guys get too far into it - it's usually easier to colour code the different people writing rather than signing, so it's immediately obvious who wrote what.
It's what my team usually does when we're making planning docs for things like PyWeek. It might look a little messier, I guess, but should be fine if you all choose more muted colours like olive or burgundy.
Up to you all, of course, whether you think this is a better idea than just signing stuff.
(I think we'll have to re-do beginning and end in light of the palette, a step we forgot to do. It depends on whether the ingredients allowed or banned changes the legitimacy of the beginning and end)
OK, so for palette: I want to ban industrial and post-industrial technology
I will accept this.
My own idea: All animals that exist are similar to, or identical to, earth animals, all the stranger stuff is derived from lore native to America. Creatures from the mythology of native people are acceptable, as are North or South American Cryptids, and Lumberjack Lore.
Could I ask for clarification? From what you said, I'm interpreting this as a ban on non-Earth animals which are also not derived from Native American lore. Is this correct?

A ban on spoken language. All direct information must be distributed through visual or kinesthetic means. Auditory information is allowed if it is not spoken (e.g. Morse code tapped out on a bench). Singing is allowed, but it must be without text.

I'm not sure what that would entail, Yarrun. Care to clarify?
