You don't need a fancy mode if your console is connected to the TV with component cables. Just unplug the Cb and Cr cables and you get monochrome. Or unplug the Cb cable but leave the Cr cable for first-generation Technicolor.
It just occurred to me that certain movies used black-and-white as a sort of artistic choice (e.g. Raging Bull and Schindler's List), and I wondered if any games had done the same and been successful.
I guess there have been some indie games that did.
